Ingredients:
1 tbsp. extra virgin olive oil
2 lbs. medium peeled deveined shrimp, cut into 1-inch pieces
1 cup finely diced pineapple
¼ cup finely chopped red onion
1 tsp. chilli powder juice of a lime
2 cups shredded iceberg lettuce
¼ cup finely chopped cilantro salt
8 4-inch soft corn tortillas sour cream, for serving

Directions:
Preheat a non-stick skillet over high heat. Add olive oil until hot. Add shrimp, pineapple, onion, and chilli powder and sauté until shrimp are pink and cooked, about 5 minutes.

Add lime juice to skillet and remove from heat. Season with salt and pepper.

Line the bottom of each taco with iceberg lettuce, top with shrimp and pineapple salsa and garnish with fresh cilantro. Serve with sour cream.
